Snackjack Pie

I'm not the cook that many gardeners are, but I do like to use the harvest (plus I wanted more roasted pumpkin seeds). One medium snackjack pumpkin makes just a little more than a pie. Yes, that's a store pie shell. Maybe next time I'll try making the crust too. The neighboring pie is from our apples trees. I call these vegetable and fruit servings.

Your pie looks delicous, yummy yummy! I also used harvest in the kitchen and I still need to try a new recipe for pumpkin breat!

I use the store-bought pie crusts from Trader Joe's--sold folded into quarters so you just unfold them into your own pie plate and no one is the wiser!

Thanks for the tip Molly. I did want to use my own pie plate for the sturdiness & better appeal and wondered how I might transfer the crust to it. Decided not in the end. Plus those folded ones would be easier to keep around.
